Happy St. Patrick’s Day! Have you cooked your share of green eggs and ham? (I have!) Looking for a fresh, new spin on celebrating this Spring holiday? Why not try a festive and leprechan-enchanted Lucky Day Smoothie?
I’m thrilled to have another excuse to share a Green Smoothie recipe with you. My friends and fellow students at my nutrition school (Integrative Nutrition) are always sharing new recipes with me. I offered up a few of our favorite family recipes in my Hungry for a Fresh Start series.
The Lucky Day Smoothie is a special twist on one of my favorite recipes and will add the perfect touch of green (kale, collards and parsley!) to your St. Patrick’s Day breakfast. Besides, who wouldn’t want to start their day with a Lucky Day Smoothie?
Packed with nutrient-rich kale and/or collard greens this smoothie’s brilliant green color offers an easily recognizable sign that it’s full to the brim with Vitamins K, A, C and manganese as well as a healthy dose of fiber.
As always, feel free to substitute your favorite 100% juice apple juice or non-dairy beverage for the water.

Lucky Day Smoothie
1 cup kale or collard greens, stems removed, chopped and packed firmly into 1 cup
1 Granny Smith apple, chopped
1 ripe banana
1/2 cup fresh flat-leaf parsley leaves, loosely packed
2 1/4 cups water
