When we served my original Squash Street Tacos at a recent event, even the die-hard meat eaters were asking for seconds.

Healthy food should taste so GOOD that we don't feel like we're missing anything.
This recipe is so delicious you'll be surprised it's healthy. AND It's so tasty you won't miss the meat.

We all know vegetables have loads of healthy benefits. To name just a few, vegetables:
- Are packed with fiber that keeps us feeling full, controlling our hunger AND a high-fiber diet has been associated with reduced risk of developing heart disease and type 2 diabetes.
- Are one of the best sources for vitamins, minerals, and disease-fighting phytochemicals.
- Help to stabilize blood sugar, which helps keep our mood and energy level steady.
- Contain a type of fiber that has also been shown to lower cholesterol and blood pressure.
No matter how many times we here: Eat Your Vegetables, many of us are still on the fence. And let's be honest, if our food doesn't taste GREAT, no matter how healthy it is, we're simply not going to enjoy the benefits. We won't be eating bland food often enough for it to make any significant difference.

Squash Street Tacos with Chiptole Cashew Crema
vegan, gluten-free 6 servings
Heavy baking tray
3 medium summer squash, cut into 2” x ½-inch strips
¼ cup grape seed oil
2 teaspoons ground cumin
1 ½ teaspoons dried oregano
1 teaspoon kosher salt
1/4 purple cabbage, finely shredded (use a mandolin)
1 jalapeño, thinly sliced and de-seeded (optional)
Cilantro to garnish (optional)
Six 4-5 inch diameter corn tortillas
Squash Option 1 - Roast
Place an oven rack in the center of the oven and preheat to 400 degrees F.
Line a heavy baking sheet with parchment paper.
Toss the squash with oil, cumin, oregano and salt in a medium bowl. Spread the mixture in a single layer on the prepared baking sheet. Roast until golden and tender, approximately 15 minutes.
Squash Option 2 - Grill
- Add squash to grill /grill pan and cook over med-low heat for 6-8 minutes on each side checking periodically for browning.

Chipotle Cashew Crema
1 cup raw cashews, soaked (for best results soak for up to 3-5 hours, Short on time? Quick soak using warm water for 30 minutes while you prep)
1/2 cup almond milk
1 canned chipotle pepper (La Costena is gluten-free)
2 garlic cloves
2 teaspoons agave
METHOD Chipotle Lime Cashew Crema
In a high speed blender combine crema ingredients.
Blend until creamy and adjust lime juice and salt to taste. Add additional almond milk to achieve desired consistency. The sauce should be tangy, salty and not too thick!
Plate as desired and spoon or drizzle sauce over taco adding jalapeño, cabbage and cilantro garnish.
Squeeze lime over tacos and sprinkle with finishing salt. Serve immediately!
