Provolone Quinoa Wrap (Gluten-Free)

This is my new favorite for lunch! Quick, packed with flavor AND protein.

Provolone Quinoa Wrap

Ingredients

  • 2 Round Slices of Provolone Cheese (Applegate Brand)
  • 3 Slices Organic Roasted Turkey Breast (Applegate Brand)
  • 1/2 Cup Baby Spinach Leaves
  • 1/4 Cup Red/White Quinoa
  • 1 Tbsp Chunky Guacamole - See my recipe for Chunky Guacamole.

Directions

  1. We're creating a wrap or taco by using the Provolone as our shell. Place 2 Slices of Provolone, slightly staggered on a plate.
  2. Layer Turkey slices on top of the cheese.
  3. Spread Guacamole onto Turkey. Sprinkle Quinoa.
  4. Add spinach.
  5. Fold gently to wrap.
  6. Voila! Eat Inspired!
