Vegetarian Tortilla Soup

 

A festive and flavorful soup filled with vibrant, colorful vegetables just in time for Cinco de Mayo. The secret to this soup is in letting the bold flavors simmer together – the longer the better. Lime, rich, ripe avocado and cilantro pair with the saltiness of blue corn chips for a delicious meal in a bowl.

Get creative! Experiment with heirloom bell peppers, varying the degrees of heat and adding other seasonal vegetables found at your local Farmer’s Market.

Vegetarian Tortilla Soup

Ingredients

  • 1 Tbsp Olive Oil

  • 1  Medium Red Bell Pepper, Seeded and Chopped

  • 1  Medium Yellow Bell Pepper, Seeded and Chopped

  • 1 Medium Red Onion, Chopped

  • 3 Cloves Garlic, Minced

  • 8 Sprigs Fresh Oregano, Chopped

  • 1 tsp Cumin

  • ¾ tsp Chili Powder

  • 2 Jalapeno Peppers, Seeded and Chopped

  • 1 Can Diced Fire Roasted Tomatoes with Juice (Muir Glen Brand)

  • 1 Zucchini, Diced

  • 3-4 Carrots, Peeled and Chopped

  • 4 Cups Low Sodium Vegetable Broth (Pacific Naturals Brand)

  • 1 Cup Frozen Corn Kernels

  • 1 Can Black Beans, Drained and Rinsed

  • 1 Can Cannellini Beans, Drained and Rinsed

  • 1-2 Cups Kale, Sliced

  • ½ Cup Fresh Cilantro, Minced

  • Salt and Pepper to taste

Garnish

  • 1 Bag Blue Corn Tortilla Chips

  • 1 Ripe Avocado, Diced

  • Grated Cheese or Non-Dairy Substitute

  • 1-2 Limes, Rinsed and Sliced

Directions

  1. Heat olive oil in a large, heavy soup pot over medium-high heat.

  2. Saute Peppers, onion, garlic and spices for 3 minutes. Stir often until onion is translucent.

  3. Add jalapenos, tomatoes, zucchini and carrots. Stir for 2 minutes.

  4. Add broth. Bring to a boil. Reduce to simmer. Let simmer uncovered for 1-2 hours.

  5. 10 minutes before serving, add beans, corn and kale. Return to boil.

  6. Remove from heat. Stir in cilantro. Season with salt and pepper.

  7. For Garnish: Place chips and avocado at the bottom of bowls. Ladle soup over the top of chips and avocado Sprinkle with cilantro and cheese (if desired). Squeeze lime over the top. Serve immediately.
