A hearty, home-cooked meal without the fuss! Perfect for a weeknight, this dinner is worthy of your favorite little trattoria. In a pinch, toasted GF bread becomes bread crumbs for the meatballs. The entire family can gather in the kitchen and help to create this quick and tasty dish. I prefer to use ingredients I have on hand. 1 1/2 lbs. Lean Ground Grass Fed Beef (7%)
3 Slices GF Bread, Toasted & Crumbled
(Udi’s Whole Grain Sandwich)
1/4 Cup Fresh Basil, Chopped
¼ Cup Fresh Flat-Leaf Parsley, Chopped
½ Sweet Yellow Onion, Finely Chopped
3 Garlic Cloves, Minced
1/2 Teaspoon Black pepper, Freshly Ground
1 Large Egg, Beaten
1 Tablespoon Olive Oil
1 Jar Sauce (Amy’s Kitchen Marinara)
1 Package Pasta (DeBoles GF Multigrain
Parmesan Cheese, (optional) OR
Non-Dairy Substitute (Daiya Shreds)
Combine ground meat, bread crumbs, parsley, basil, salt, pepper, egg and 1/4 cup warm water in a bowl.
Use hands to form into meatballs.
Cook in oil over medium heat.
Turn gently with fork until browned on all sides.
Turn heat to low.
Slowly add jar of sauce to meatballs.
Cook pasta according to package directions.
Spoon sauce and meatballs over pasta.
Serve with parmesan or Daiya cheese substitute if desired.
