Riviera Picnic Potato Salad

This dish is inspired by a summer spent beach-hopping along the French Riviera. Simple ingredients found at any local market infuse the potatoes with the feeling of warm summer days and ocean breezes. Enjoy it for lunch or as an excellent addition to a summer picnic or BBQ. As the flavors mingle it gets better with time! This salad relies on oil and vinegar rather than mayonnaise for its base. Get creative and add what you have on hand - our most recent batch added fresh, crunchy green beans and bell peppers!
