This dish is inspired by a summer spent beach-hopping along the French Riviera. Simple ingredients found at any local market infuse the potatoes with the feeling of warm summer days and ocean breezes. Enjoy it for lunch or as an excellent addition to a summer picnic or BBQ. As the flavors mingle it gets better with time! This salad relies on oil and vinegar rather than mayonnaise for its base.

Picnic Potato Salad
1 ½ Teaspoons Salt, Divided
½ teaspoon Fresh Ground Black Pepper
1 Tablespoon Capers
¼ Cup Greek Olives, Pitted and Chopped (optional)
2 6.5 oz. Jars Marinated Artichoke Hearts with Juices
1 Five oz. Can Chunk Tuna in Water, Drained (substitute leftover steak or chicken as desired)
4 Cups Potatoes (such as Red or Yukon Gold), Peeled and Cubed
In a large pot add water, 1 teaspoon of salt and a steaming basket. Place potatoes into basket. Cover and steam over medium heat approximately 15-20 minutes or until firm but tender. Remove from heat and drain.
Combine remaining Salt and next 9 ingredients (through Red Onion) in a large dish with an airtight lid. Include liquid with marinated artichokes. Stir ingredients well.
Break tuna into smaller chunks and toss into dressing mix until coated.
Add potatoes. Toss until coated.
Cover and refrigerate for at least one hour, preferably over-night.
With lid held tight, shake container gently to coat with dressing before serving.
