Spicy Cilantro Dressing

I love this versatile dressing for its ability to spice up the simplest dishes. Quick and simple to make, use this dressing sparingly or drizzle generously over salad, rice and beans or fresh veggies. Spicy Cilantro Dressing is also a perfect, nacho, taco or fajita topping. Sprinkled over fresh slices of avocado – such a deliciously refreshing treat!

I’ll be enjoying this dressing drizzled over roasted eggplant, cauliflower, spring onions and peppers this weekend in celebration of Cinco de Mayo. This simple sauce adds warmth and excitement to any dish, so no matter what you’re planning for this weekend, Spicy Cilantro Dressing is the perfect complement.

 

BENEFITS OF CILANTRO

Dating back to ancient Greece, Cilantro (a.k.a. Coriander) has a distinctive smell that will fill your kitchen once you add it to your food processor. Along with being a wonderful anti-inflammatory herb, cilantro is a powerful natural cleansing agent that may help to remove toxins and heavy metals, such as mercury, from our bodies. The oils in cilantro aid our digestive system and help to stimulate digestion through peristaltic motion.

With its many other beneficial qualities, including providing protection against bacterial and fungal infections, balancing hormone-related mood swings and reducing the instance of urinary tract infections, this excuse to spice things up in our homes and kitchens!

Every Cinco de Mayo I celebrate and remember a fabulous party that I attended almost 11 years ago – the weekend my beautiful and amazing daughter was born. Happy early Birthday to an incredible young lady!

Spicy Cilantro Dressing

INGREDIENTS:

1 cup cilantro leaves, rinsed, dried and firmly packed

2 garlic cloves

1/4 cup lime juice

1/4 cup apple cider vinegar

1/2 cup extra virgin olive oil

1/2 teaspoon salt

1/2 teaspoon pepper

1/4 of a jalapeno (or to desired level of heat)

METHOD:

  1. Combine all ingredients in a food processor or blender.

  2. Pulse or puree until smooth.

  3. Stir as needed.

  4. Cover and refrigerate for up to 2 days.

Simply Delicious Chicken

Ever need a quick and delicious meal without another trip to the store? Looking for a way to dress up your chicken? Need a dinner that will please everyone?

Everyone in our family loves the sweet-spicy sauce on this simply delicious chicken! This combination is full of flavor and tastes as though you spent loads of time in the kitchen. It easily pairs with whatever you have on hand.

Keep these two bottled sauces in your pantry for a last-minute meal you can whip up any night.

As always, I’ve listed a few of my favorite Brands along with the ingredients. Feel free to experiment, get creative with flavors and to substitute your own personal favorites. ENJOY!

Simply Delicious Chicken

Ingredients

  • 4 Breasts Organic Boneless Skinless Chicken (approx. 2 lbs total)
  • 1 Bottle Gluten-Free BBQ Sauce (Gayle’s Extra Sassy)
  • ½ Bottle Gluten-Free Sweet Chili Sauce (Grama’s )
  • 4-6 Cloves Garlic, Minced (Fresh or Jarred)
  • ¼ Cup Water

Served with:

  • 1 Cup Brown Rice (Lundberg) (optional)
  • Hearts of Romaine Lettuce, Chopped (optional)
  • Cilantro, Chopped (optional)
  • 1 Avocado,  Sliced (optional)
  • 1 Lime, Quartered (optional)

 

Directions

  1. Preheat grill or oven to 350°.
  2. Line a baking pan with parchment or foil.
  3. Combine BBQ Sauce, Chili Sauce and Garlic in a small bowl. Pour ¼ Cup water into BBQ Sauce bottle, shake and pour into bowl. Stir well.
  4. Place each chicken breast side-by-side on baking pan.
  5. Pour sauce mixture over each breast.
  6. Cover securely and refrigerate for as long as you can allow – up to 1.5 hours.
  7. While meat marinades or is cooking, prepare rice to package directions in rice cooker or on stove.
  8. Grill until meat is cooked thoroughly, flipping once. Or bake at 350 for approximately 45 minutes or until golden brown and cooked through.
  9. Chop lettuce, cilantro (to taste) and avocado. Serve a mixture on each plate.
  10. Serve chicken breasts over rice. Squeeze ¼ lime over each. ENJOY!
